Recipe: Graham cracker chicken

This is a recipe I came up with recently for my wife: Graham cracker chicken.

Ingredients (per chicken breast):

  • 1 boneless, skinless chicken breast
  • 3 squares of graham crackers
  • 1 tsp. sugar
  • ¼ tsp. salt
  • Dash nutmeg
  • 1 tbsp. yellow mustard
  • 1 tsp. honey
  • Dash lemon juice
  • Drop of vanilla
  • Optional: grated cheese (parmesan will do)

Directions: Mix the liquid ingredients together in a shallow dish. Crush the graham crackers and add the dry ingredients into a separate shallow dish. Dip the chicken breast into the liquid mixture, coating thoroughly, then bread completely with the graham cracker mix. Place on a greased shallow roating pan and put into a 350° oven. Bake at least 30 minutes.

Optional: Sprinkle with grated parmesan cheese before baking. Experiment with other ingredients; you can replace the yellow mustard and honey with 1 tbsp. honey mustard (duh!), for instance.

    I was so sick of chicken this way and that way with LA weight loss, that Jon came up with this wonderful recipe that he shouldn’t be sharing…It’s too good to share. 😉

  2. Does this mean you can cook Jon? I can’t cook 🙂 Maybe I’ll give this recipe a try.

    As a question from a layman: If I had all these ingredients laid out in front of me on a table, and all the tools/appliances at hand, would I be able to sink teeth into the product 45 minutes later, or are there hidden, time-consuming preperations steps only cooking afficianados would be familiar with? (btw I’m not being sarcastic, I honestly dunno :] )

  3. I can cook, yeah. Whether you can convince me to cook is another story. 🙂

    Roughly 45 minutes sounds about right. The biggest time constraint I’ve found is crushing the graham crackers and getting the dry stuff ready.

  4. Do I dare tell you that I think we have the "crushed" graham crackers, like for pies. I wouldn’t know how much my 3 gr. crackers would measure up to…it might be worth your while next time.

    It *does* take a lot of coercing to get him to cook though…he’s much better than me.

  5. Ha ha! Sounds like my place. I’m a great cook, but generally only ever cook when we have guests or it’s a special occasion.

    I’m ALWAYS making stuff up on the spot.
